It could be the oppressive heat or because lemons are so bright and fresh tasting or because this recipe is so damned easy (considering the result), but I think I have found my new favorite chia pudding. I’ve never been a huge fan of lemon desserts, but perhaps my palate is changing yet again, because I swear I’ve found my new flavor. Keto Lemon Chia Pudding
Makes 2 servings
Ingredients:
1 13.66 oz. can of unsweetened coconut milk
3 tbsp. Swerve Confectioners
1 tsp. vanilla
1 tbsp. lemon zest (about 1/2 lemon)
3 tbsp. lemon juice (about 1 lemon)
6 tbsp. chia seeds
*Splash of lemon extract, if needed
Method:
Add coconut milk, Swerve, vanilla, lemon zest, lemon juice and chia seeds together and blend (either in a blender or using an immersion blender). Taste a bit to see if it’s lemony enough for you. If not, add a small splash of lemon extract. Store in an airtight container in the fridge and let it set overnight.
Serve with a nice dollop of whipped heavy cream (sweetened with a teaspoon of Swerve Confectioners and a splash of vanilla). Add a little lemon zest on top, if you’re feeling pretty 🙂
